Cinnamon is a versatile spice that is much loved for its woody, sweet fragrance, and can be used for both savoury and sweet dishes, often for Asian, Middle Eastern, and North African cuisines.
It is a kind of bark that originates from a variety of aromatic trees known as Cinnamomum, which are grown mostly in Sri Lanka. The inner layers of the bark are shaved from these trees, and roll up into quills when they are dried. The dried barks are either then cut into sticks or crushed into ground cinnamon.
