Recipe: Whole wheat waffles with banana and cashew nut sauce

Aussie expat and current executive group executive chef of COMO Hotels, Amanda Gale has shared a waffle recipe for breakfast to show that not all them have to be naughty.

Recipe: Whole wheat waffles with banana and cashew nut sauce

Waffle dough
2 eggs
1½ cups wholewheat flour
½ cup soy milk
1 tablespoon baking powder
2 tablespoon brown sugar
½ teaspoon cinnamon powder
225 g natural yoghurt
½ cup oats
¼ cup vegetable oil
1 medium ripe banana

Mix all the ingredients together and whisk. Cook on a waffle iron, or in pan on medium heat.

Banana cashew nut sauce
1 piece ripe banana
125 g silken tofu
50 g raw cashew nuts
1½ tablespoon honey

In a food processor, blend all the ingredients together until smooth and store in an airtight container in the fridge.

Waffle garnish
8 fresh strawberries
2 ripe bananas, cut into halves and sliced lengthways
Handful of walnuts
Handful of baby mint leaves
1 tablespoon banana cashew nut sauce (see recipe above)

Strawberries candied in maple syrup (place 12 whole strawberries cut into halves and in a 100 ml of maple syrup and heat slowly in a pan)


Place the waffle pieces on a plate, add two slices of raw banana, the fresh strawberries and the warmed strawberries with the maple syrup on top. Spoon a little of the banana and cashew nut sauce over the dish, finishing with a scatter of fresh baby mint leaves and toasted walnuts.
