Vincent Hernandez is the festival director of the BBR festival — otherwise known as the Bleu Blanc Rouge festival — that will be taking place in Sydney on 14-17 July.

Shinsuke Nakatani, a Japanese chef mastering French cuisine in Paris.
What’s currently in your pantry?
Fresh herbs – parsley, garlic, onions, ginger; dried fruits; and about six different oils and as many vinegars! Then you duplicate that for Korean and Japanese wines, oils, spices, and you have my pantry.
What’s in your fridge?
Meat from the butcher, butter – a lot of butter, French jams, and veggies.
Best thing to come out of the microwave
The what?? lol Absolutely nothing!
What did you last eat?
I ate a fondue of French Emmental and two Cheeses from the Alps, melting slowly in Pino griggio, pepper and kirsch. Delish!
Where do you like to go out to eat?
Phamish. I would die for a Duck Pancake.

Margarine? Butter only, and French salted butter.
